Lo and behold, I actually have a recipe for you today. I was reading one of my favourite blogs, Hello October, and Suzie was talking about a dessert she had in a restaurant that could easily be replicated at home – berries and white chocolate sauce. So obviously, I had to make it! It turns out it’s one of those recipes that taste amazing, but look absolutely horrific. It didn’t help that we ate later than I thought we would, and all the light had gone by the time I got round to photographing…. but anyway, excuses excuses! Because the chocolate sauce is made essentially from scratch, you can really play around with the nuances of flavour, adding less sugar, more vanilla, or different flavours entirely! Personally, I think cinnamon would make an excellent addition to this during the colder months. If you have all the ingredients on hand, this can be made within 10 minutes, making it ideal for those lazy cold winter evenings.
Ingredients (for 2 servings)
500g mixed frozen berries
1 pinch Truvia
40g cocoa butter
150ml vegan cream (I used Oatly)
1/4 cup powdered sugar
1 tsp vanilla extract
1. Divide up the berries into two bowls, sprinkle with Truvia and microwave until warm. Alternatively, you can heat them up in a saucepan.
2. Heat up the cream in a small pan. Remove from heat and whist in vanilla, powdered sugar (I recommend starting with less) and cocoa butter.
3. Top the berries with the sauce and serve!
