I love pretty much an form of cupcake, but if I had to choose only one favourite, I would say Red Velvet. There’s something about the colour, the rich taste and the perfect balance of chocolate that gets me every time. My favourite recipe is a the one from the Hummingbird Bakery – Cake Days, which I’ve veganised with the help of Alpro yoghurt and egg replacer. But unfortunately, I can’t maintain my health and eat cupcakes every day, so I’ve had to come up with an alternative. You might raise your eyebrows when you read the ingredients, but trust me – they create the perfect balance of rich, earthy, chocolatey and sweet.
Ingredients (for 1 glass)
2 apples
2 small beets (or 1 large one)
1 scoop chocolate protein powder
Method
Juice the apples and beetroot. Whisk in the protein powder and serve. Juice recipes really aren’t hard, are they!?
